Looking for a low-carb Chinese meal?

Chinese food is not all carbs with dishes accompanied by rice or noodles. Here's a protein-rich suggestion that manages to be both healthy and stupidly easy. Enjoy!

One-person hotpot.

This was inspired by some hotpot leftovers I had when I hosted a big hotpot but still had tons of ingredients in the fridge. It’s also good for those people who are on an Atkins/Low-Carb diet – and for those that aren’t, boil up some udon noodles or heat up some rice.

Prawns Shell-on (available from most supermarkets) Tesco do a big portion at Xg for X calories
Pack of Fresh Tofu (112 calories per 100g) or Fried Tofu or Dried Tofu
Tons of green veg (choi sum, bak choi etc), or spinach, iceberg lettuce or romaine lettuce make decent alternatives too
Protein – lots of choice here: lean ham, fish balls, beef balls, seafood sticks
Dried Mushrooms (pre-soaked in boiling water)

For dipping sauce:
Sesame Oil
Sesame Paste
Soy sauce
Chilli oil and/or fresh chillies (I keep a pack of birds eye chillis in my freezer and snip them with scissors direct from the freezer for a great kick!)
Oyster sauce (optional)
 mix the above to taste

Then boil your selection of ingredients. Dip into dipping sauce and eat. Healthy and quick and pretty damn filling!
